Peanuts and Tree nuts may elicit a very severe allergic reaction (anaphylaxis).

Food causing allergy most frequently is egg, fish and cow's milk in childhood, and peanut/tree nut, fruits and fish in adults.

In Spain the most frequent tree nut allergy is almond, but in the USA is commonest panut allergy (due to its high intake).

Fruits are highly consumed and its also common its sensitization. Peach is the most frequent fruit, producing mainly oral symptoms.

Cow's milk elicits allergy due to its proteins, and that is the reason it is known Cow's milk protein allergy. When the lactose (a carbohydrates in the cow's milk) is the main agent, the patient suffers lactose intolerance. Cow's milk cannot be substituted by goat's milk because there may be cross-reactions. It is allways mandatory to read carefully the labels of every single processed food ingested to rule out wether it contains milk or some of their derivatives.

Eggs are the second food (after cow's milk) causing allergy in children. Some vaccines may contain egg or traces of it.

Acute Urticaria is the most common sypmton in Food allergy

Food Cross-reactions

The protein responsibles of the food allergy may also be in other food. When a patient reacts to more than one food with the same protein in common, we talk of cross-reaction. A classical example is a cross-reaction between peach and almond (they both belong to the same family: rosaceae)

Allergy to some vegetables may be associated with allergic symptoms to some pollen. The most well-known case is patients with birch or mugwort and symptoms after eating carrot or celery.

Some patients suffering Latex-fruit Syndrome may have problems with vegetables (avocado, banana, kiwi, chestnut, etc).
